What better way to feed the spam forum than to make a thread about food?? *grins*

I had a Turkey burger for lunch. Had turkey burger and potato salad last night for dinner. I have no clue what I will have for dinner tonight.

*eagerly awaits for Alum to post what is on her menu*

Our supervisor ordered pizza from Domino's for our lunch. Last night's dinner was stuffed mushroom caps, an appetizer at the bar. Tonight will likely be junk food, because the Cardinals are playing.

Hooray! The food thread is back!

Tonight I just had homemade fajitas and tamales, and flan for dessert. This past week it's been pretty hectic so I haven't been cooking as much as I would have liked. Today for lunch I had a spinach salad with bleu cheese, pears, and slivered almonds. The nicest meal I had was maybe a week ago: a grilled salmon burger on a whole wheat bun with wasabi mayonnaise; accompanied by tabbouleh, steamed asparagus, and a spinach salad.

Can't wait to have the time and the kitchen to cook like I really want to!

Tonight at Alumette's house, dinner included homemade quiche Florentine; spinach and romaine salad with tomato, almonds, bleu cheese, and red wine vinaigrette; and fresh pears with praline almonds for dessert.

Admittedly, I used a frozen pie crust. For some reason, I'm just remedial at pie crusts and am too impatient to force myself to become proficient.

Still, it was a tasty dinner.

Roasted chicken and white bean pizza, and a salad; and a local white table wine.

Here's the recipe for the pizza (it's really tasty and easy):

One three-pack of prepared small (7") pizza crusts (I use Mama Mary's brand)
One can Great Northern beans, drained (cannellini work well too)
lemon juice, crushed garlic, and black pepper to taste
One package pre-cooked roast chicken pieces (or leftover roast chicken, about 8 oz)
Fresh baby spinach leaves
Shredded mozzarella and/or provolone.

Heat oven to 450.

Combine beans, lemon juice, garlic, and pepper in a blender or food processor until smooth. Top each crust with 1/3 of the bean mixture (this is your "sauce"). Then top with chicken pieces, spinach, and cheese.

Bake for 8 minutes or until crusts are golden.

Bon appetit! :)

Chocolate coconut? What kind of messed up, failed cross-breeding experiment produced that abomination?

BBQ chicken sounds damned good, though. Do you do whole chickens, or just chicken breasts on the grill?

Tsarmina
04-27-2005, 03:18 PM
Fine. You don't like Chocolate coconut? More for me!

Um, since Amoeba is cooking, I'm not sure how he's doing them. It'll probably be just the breasts. If I was grilling them, I'd use all pieces of chicken-leg, thigh and breast. I've only done a whole bird in the oven.

mmmmm. Grilling. I love grilled food so much, that when I'm finally in a position to build my house, I'm going to design an outdoor kitchen. Unless you live under a rock, you know I adore cooking; and I also happen to adore dining al fresco, so an outdoor kitchen is pretty much my wet dream. (Did I say that out loud?)

Sadly, I don't even own so much as a hibachi at this point (Cursed apartment regulations!), so I'm stuck with broiling my food as the next best alternative.

Speaking of that, tonight's menu was:

Chili-lime rubbed tilapia tacos with citrus salsa slaw, and fresh fruit.

I'm hoping to bring on summer more quickly by eating what I call "vacation food" I guess.

Yesterday's dinner was chicken, spinach, and soba soup. I believe I posted the recipe for that on the old forums.

This being Day One of my South Beach Diet adventure, here's what's on the menu chez Alumette:

Greek-Style Scampi (it wasn't in the SBD cookbook but it's one of my faves and it fits the criteria for the diet, so... *score!* It's basically shrimp baked in diced tomatoes and herbs, with crumbled feta on top and a squeeze of lemon.)

Spinach salad with pine nuts and red wine vinaigrette

A glass of cabernet.

Okay, technically the cabernet is off the diet. I'm not supposed to have any alcohol for two weeks. But giving up wine with dinner is too much torture for me. I'll deal with the slower weight loss.

You've clearly never had very high quality dark chocolate. It becomes less like the nasty artificial stuff we call 'chocolate', and more true to the flavor of the cocoa beans. It's actually more like tasting wine -- it has all these wonderful subtle nuances and flavors in it...

Alumette... you'll love this... an ounce of dark chocolate a day is good for your heart.

I can definitely recommend several brands... usually available at specialty places like Trader Joe's.

I can also recommend Unique Origin varietals... I've tried the Ocumare and the Guaranda (I must sound like I'm speaking another language to those non-chocophiles...), and it's really interesting to taste the differences. Guaranda is kinda fruity, and the Ocumare is spicier.

LOL. Very cute, Salibu! ;) I started to get grossed out and then I thought to myself, "She can't really be serious."

My menus are getting progressively more boring because I'm in "Phase One" of the South Beach Diet, which means it is some combination of lean meat and a boatload of vegetables...day in, and day out...<sigh> 12 more days till I can cook real food.

Tonight was baked chicken breast in Provencal ragout, steamed broccoli, and a green salad. Hmph. Boring.

(Oh, PS: Just between you and me, I happen to like macaroni and cheese with smoked sausage mixed in. :) You should try it with homemade mac and cheese, using fontina and provolone instead of cheddar, and then mixing in the sausage. Yum!)

(Oh, PS: Just between you and me, I happen to like macaroni and cheese with smoked sausage mixed in. :) You should try it with homemade mac and cheese, using fontina and provolone instead of cheddar, and then mixing in the sausage. Yum!)

For a few years there we were at the point of budgeting next to nothing for food, so we basically lived on the REALLY cheap stuff. We learned one basic rule: Never follow the directions on the box/package.

For instance... the directions for macaroni and cheese alway tell you to mix milk and butter with the cheese powder. DON'T DO THAT! Do this instead: For the fat, use mayonaise. Two big glops with a tablespoon should do. The mayo replaces the fat in the butter and milk. Next, add a little of your favorite mustard. This should be done only a little at a time till you think it tastes right... you can always add more but you can't take any out if too much. Use plain water as the liquid. Like the mustard, use only a little at a time to avoid overthinning. Use whatever seasonings you happen to enjoy as well. Mix everything together while the noodles are cooking and then add it when they are drained. This method makes "El-Cheapo" mac and cheese much creamier and tastier than the directions.

Of course, completely from scratch is best, but sometimes one just does not want to take the time. :)

My mom made the mashed potatoes from scratch, and used sour cream instead of milk in them. She cooked real bacon and tore it up to mix into the potatoes, and we each sprinkled cheese on the top after we spooned some on our plate. The whole effect was mindblowing. I never want instant potatoes again!

I'm planning on chicken parmesean for tomorrow night. With salad and garlic bread of course. Who knows what I'll throw together for dinner tonight. I've been rather craving a nice PB,J and Fluff sandwhich. :chuckle:

I've had two little bitty packets of Gardetto's today. I love the little bagel chips, or whatever they are. The dark brown things. I think I'll pick a big bag up on my lunch break and snack on them this afternoon instead of getting an actual lunch.

You guys! The Wal-Mart I went to at lunch to buy some Gardetto's was out of them, so I bought a bag of Barbecue Ritz Chips instead... and they're awesome! Like potato chips, only thicker, crunchier, and with an underlying buttery taste like Ritz crackers.

Man, these are almost as good as the Buffalo Wings and Cheesy Blue Twisterz, which are my favorite snack food ever.

Mina must be busy at work today.

Well, I had frozen burritos and leftover mashed potatoes for dinner last night. The potatoes were even better the second day.

Today we're having a food day at work, because my supervisor is getting a different job, and we're wishing her well. I've had jambalaya, spaghetti, shrimp cocktail, peach cobbler, brownie, strawberry cake, cinnamon rolls, and later I'll probably have a piece of the chocolate cake. I know it sounds like a lot, but when there are thirty people in your workgroup, the portions are extremely small.

Busy? Not really. Dreaming of my dinner? Definately.
The menu for tonight:
Chicken parmesean (sp)
Angel Hair pasta
salad
garlic bread
http://img.photobucket.com/albums/v610/Tsarmiina/smilies/tasty.gif

For lunch I had buttered noodles and a piece of the breaded chicken for the above mentioned meal. (cooked up the chicken last night. I'm transporting dinner over to AM's house so it's easier if it's mostly cooked already) Then one of the girls here couldn't finish her oh-so-bad and greasy onion rings... so I ate those. UGH. Why can't I just say no?? But I did have a yogurt for breakfast.

That sounds great, Mina!

Tonight should be fun. I'm picking up some chicken legs at Buffalo Wild Wings... it's Wednesday, so the drumsticks are only 50 cents apiece. Then I'm headed out to a friend's house to watch the Cardinals finish sweeping the Reds, where we'll eat chicken, drink beer, and argue about baseball.

After the game, if it's not too late, we might watch "National Treasure". And drink more beer. :p

Man, I take care of my boys. If I go to someone's house, you can believe all of my beer bottles get into the trash, any dishes I use get into the sink (or dishwasher, if it's dirty stuff in there), and any trash I create gets thrown away. I've even been known, at big parties, to pull the trash out of a trash can and ask for a new trash bag, just to keep people from trying to balance beer bottles on top of the trash all night.

My own room may be a pigsty, but I don't make other people live in it.

Heh, it was BASEketball, one of the first movies by Try Parker and Matt Stone, the creators of South Park. I loved that movie so much, I saw it 6 times in the theater! I think I was a senior in high school when it came out. My friend Matt and I went every night of that week except Saturday night.

Oh, and all I've had to eat today are Gardetto's. I've found a new way to save a ton of money each week. I collecta bunch of my "silver change" out of my change box at home, and put it in my pocket. Then when I get to work, I use it at the vending machines to buy Gardetto's and Cherry Coke. That's enough to tide me over the whole day at work, and since I live at home, my mom makes dinner at night! The only time I have to spend my actual money on food is when I go out with friends. This should work at least as long as my change box still has nickels, dimes, and quarters in it from the four years I spent away from home, tossing change into the box every day after work...

Well, I spend about $3 per day on vending machine snacks, using money that was just collecting dust in a box, as opposed to going out for lunch and spending $5 to $7 of my hard-earned paycheck money per day... so it works for me!

And stay out of my room as long as you've got all your clothes on!

Me neither. Unless all that were left were 15? :eyebrow:

I've had some yummy stuff this weekend.
Friday's dinner: AM & I shared a 1/2 chicken meal from Boston Market. (neither of us were really hungry) Sides were mashed potatoes, sweet potatoes and cinnamon apples. Also their caramel brownie which we ended up not eating until Sunday morning.
Saturday: One meal late morning. Went to the diner down the street. Scrambled eggs, French Toast, Bacon, Sausage and Ham. (leftover ham with pea pods for lunch today.)
Sunday: TGI Friday's. We shared...Jack Daniel’s® Tower-Jack Ribs, Shrimp and Sesame Jack Chicken Strips. Served with Friday’s® Jack Daniel’s® sauce. Dessert was the Chocolate Rush. Two slices layered with rich chocolate fudge, dark chocolate mousse, white chocolate mascarpone mousse, chocolate cake and rich chocolate ganache, topped with shaved white chocolate and served with drizzled raspberry sauce Yes. It was that awsome and then some. After eating that, my chocolate milkshake didn't taste all that sweet anymore. :chuckle:
Later in the evening I had a PB&J sandwhich while my computer re-booted from a particularly nasty map disco.

This morning: Chocolate Royal Slimfast.

I usually don't eat out that much. It was an unusual weekend for me. I guess I need to cook more this week to balence it all out. Damn. And I kinda wanted pizza.

Imagining myself in pink tights helps. They are the most unflattering piece of clothing in the universe. Without question.

I ended up not eating the stir fry for lastnight's dinner because I wasn't hungry. So I had it tonight:

Breakfast: over-easy egg and two slices Canadian bacon
Lunch: Chicken caesar salad (no croutons), and a V8 juice
Snacks: 15 pistachios, seltzer water, a stick of string cheese, and celery sticks
Dinner: Chicken-vegetable stir fry
Dessert: mocha custard

There is something horribly, horribly wrong with that phrase. Is it bacon... made from turkey? Or some mutated pig-turkey that has greasy pink feathers and goes "Gobble-Oink"?

My mom made homemade burritos last night for dinner, which were pretty decent. I feel like eating a burger today, so I'll probably just go down to the cafeteria here at work.

Food is for the weak! Crash diet time!

I guess I'm weak too. I love food with an intense passion. Which is why I love to cook, and I cater (very) part time in addition to teaching French and doing ballet.

Tonight's dinner was:

Sauteed chicken breasts in a provencal white wine-tomato reduction (not sure what to call it since I kinda made it up on the fly), couscous, and a green salad with pine nuts.

I poured a *fantastic* California chardonnay (Monterrey, Arroyo Seco). I normally despise most American chards, since for some reason American winemakers seem to think it will kill them to make a chard without oak, but this one was lovely: no oak to speak of, with kind of a buttered toast and apple note, lots of fruit, and a mineraly/flinty finish. It was absolutely lovely. And the best part is, it was cheap, something between $8-$12, if I remember correctly.

For my fellow oenophiles, it was a 2002 J. Lohr Chardonnay. I'll definitely be buying it again. Want to try it with some kind of cream sauce next time since the wine's acidity was nice and snappy.

I have a few cravings in life. One is chocolate. Another is to be warm.

I discovered today which is stronger.

I shivered quite happily while enjoying my bowl of chocolate caramel ice cream drizzled with chocolate syrup.

*reads most of the posts and pummels Alumette for being able to cook whatever she wants* I live with picky picky picky husband who happens to be allergic to garlic... pretty much freaking hosed... no vinegar no mayo no ketchup no sour cream.... i can make um, chili.. and tacos (from mix with nothing special on them).. um, grilled chicken PLAIN doesn't like bbq sauce or any sauce... my ONLY choice is plain or marinated in teriyaki... once in awhile i indulge myself and buy some fresh green beans and sautee them in butter and garlic and run my hubby out of the house.... they're sooooo freaking good... mmm..

last night was chili... um, tonight, leftover chili.

Mina, I've been on the South Beach Diet for about a month now, and I love it! I've lost something in the neighborhood of 10 lbs! (Didn't weigh myself when I started, but I got weighed at the doctor today and I'm within 4 lbs. of where I'd like to be).

You will likely have to buy all new jeans in a week or two. And IMO it's a really easy diet to follow once you break yourself of the carb cravings (beware, they can induce some craaaaaazy mood swings!)

Good luck with it!

No, I'll be able to fit back into my old jeans! I also have quite a few jean shorts that are practically new that I'm looking forward to fitting into again. The weight loss is almost secondary to improved health and energy we will be enjoing. :) :) :)

I just came up with a new recipe for scrambled eggs. :)

I call it "Babylonian Scrambled Eggs", because the origins of the ingredients come from diverse places, and because i thought its a cool name. :D
Now, i am never precise about my cooking, so please bear with me if the descriptions are a little vague.
The meal is relatively simple to make though, so i hope that wont be too much of a problem.

What do you need:
Three eggs
Slightly less than two tablespoons of butter
A large slice of Ham
A small Onion
---
Herbes de Provence
Oregano
Thai Red Curry Paste
Salt (preferably vegetable salt)

What do you do:

-Dice the ham and the onion into tiny bits.
-Put the butter on the frying pan, set it on medium power and let it melt.
-Open the eggs onto the frying pan, and throw in the diced onion and ham immediately afterwards.
-Stir to achieve sufficient scrambledness. :p
-Add a minimal amount of Thai Red Curry Paste. And i cant stress this enough, that stuff is really strong.
The amount you take should fit on the tip of a butter knife. Once you add it, stir the whole thing again, to spread it around.
-Add a pinch of Oregano and Herbes, and stir it again a little.
-Turn the gas off, add salt and serve with green tea. :)
It should still be a little bit fluidy when its done.

So anyway, thats pretty much it. I thought you guys might get something out of it. :notme:
